I didn’t have any blueberries so I substituted them for raisins, and used wholemeal flour instead of buckwheat. I also accidentally added twice the amount of carrot needed (oops). Nevertheless, they still turned out rather well! It just shows that it’s okay to make mistakes in the kitchen–you don’t have to be a “perfect baker” to get delicious results.
I bake muffins alllll the time and I’m constantly looking for new and exciting recipes. I never use carrot in baking so it was great to experiment with a new ingredient!
As Izy suggested, I sprinkled a mix of demerara sugar and cinnamon on top of the muffins which definitely added that final pizzazz.
These are best served gently warmed in the microwave, and as always, with a large cup of tea and a good book.
