These cookies are a staple in my house. They’re basically my default recipe when I don’t have a lot of ingredients or time, but desperately want to bake. These cookies are chewy and scrumptious, and have become my favourite afternoon pick-me-up!
What You Need:
1/3 cup of sunflower oil (or any other cooking oil)
2/3 cup of brown sugar
1 teaspoon of vanilla extract
1 large egg
1 cup of wholemeal flour
1 teaspoon of baking powder
Small pinch of salt
1/2 cup of rolled oats (not fast cooking)
1/2 cup of sultanas (or any other dried fruit)
What To Do:
Preheat your oven! I forget to do this waaayy too often so before you do anything else, turn on your oven to 180°C or 160°C (fan force).
Combine oil, egg, vanilla extract and sugar in a bowl. Use a hand whisk to mix until the colour turns a light, golden brown.
Add flour, baking powder, and salt to the wet ingredients. Mix in with a wooden spoon. Stir in sultanas and rolled oats.
Scoop tablespoons of dough onto a baking sheet lined with baking parchment. Be sure to leave space for the cookies to spread.
Bake for 11-17 minutes or until lightly browned. I rotate the baking sheet halfway through.
Allow to cool for 5 minutes on the sheets and then completely on a wire rack.
